Keto Chicken Strips!



Ingredients:
  •  chicken tenders or you can cut them up and make chicken nuggets
  • 1 bag of plain pork rinds 
  •  seasoned salt
  •  garlic powder
  • onion powder 
  • 1 cup of mayo 
  • 2 or 3 table spoons of mustard
  • Extra Virgin Olive oil for frying 


Instructions:
  1. Crush your pork rinds very well in a food processor or just beat the crap out of the bag! Ha!  Dump them into a bowl.
  2. Now mix in all your seasonings in the pork rinds. Use a lot of seasoning!
  3. In another bowl mix mayo and mustard.
  4. In batches, dip the chicken into the mayo mix, then the pork rinds.   
  5. Heat about an inch of EVOO in a skillet over medium-high heat. Fry the chicken in batches until golden brown. A couple of minutes per side should be sufficient.
  6. Drain on paper towels.
  7. Serve immediately.


SO GOOD! And basically NO carbs!


I didn't list exact measurements on seasoning, but I will say, SEASON LIBERALLY. 
(That means use a lot of seasoning!)
